Lindsay: The Wheat-free Edition

My plunge into the world of food allergies began in December 2008. I had been suffering with all sorts of digestive issues over the past year and finally took it upon myself to see an allergist “just in case” it was something I was eating. With no personal history nor much family history of food allergies, my allergist expected negative results from my 60-food in-office prick test. But, to the contrary, I tested positive to an array of foods, with an alarmingly high histamine response to wheat. The hive formed from wheat did not compare to the hive many of the others caused and I needed to cut wheat out of my diet immediately.

Eliminating the majority of my favorite foods (pizza, breads, baked goods, pasta) would not have been my first choice, but well worth relief from the pain and digestive distress I’d been dealing with. So many gluten-free foods are now on the market that I can have a version of just about anything (when I save up and deem it’s worth the price! e.g., $7 for a bag of pretzels???)

The biggest challenge for me is not being able to eat what is put in front of me. I’ve always been willing to try new things and have enjoyed eating out and at friends’ homes. Having others cook for me is so difficult and having to turn down food offered to me or knowing someone is going way out of their way to prepare food for me (that may still make me sick!) is a little miserable.

In this blog I plan to share some favorite recipes and amusing recipe disasters as well as other commentary, life experiences, and helpful resources. Adjusting to food allergies and moving from surviving to thriving is an on-going journey! And I sure am looking forward to that glorified body God will one day grant me in Heaven! (1 Cor. 15:35-50)
